Focaccia

Try adding herbs such as rosemary or thyme, or perhaps some chopped chilli. If you wish to top the focaccia with rosemary, just before you drizzle the loaf with olive oil, make small. Make a simple, homemade version of this classic Italian bread. An Italian olive-oil brea quite flat and usually round or square-shaped.


It has an almost cake-like texture and is often flavoured with herbs such as rosemary, sage or basil, topped with olives.

Bake an Italian focaccia bread stuffed with mozzarella, artichokes or new potato and rosemary. For thyme and garlic focaccia , add tbsp chopped fresh thyme to the dough with the oil and water, and sprinkle over finely chopped garlic cloves before making the dents. For sun-dried tomato focaccia , add finely chopped sun-dried tomatoes to the dough with the oil and water. Before serving, sprinkle with some shredded fresh basil.


It’s the kind of thing you can get excited about making on a Saturday afternoon and have great fun playing with the toppings. This focaccia is not fussy. I often throw the ingredients in a food processor, whiz it up then leave it overnight.


It originated in Genoa, Italy, and has since become one of the most popular breads and Italian recipes in the world.

It can be served with pasta, on its own with a dipping sauce or even as a pizza base. Pour on some tasty extra virgin olive oil and sprinkle with flaked sea salt. My children love this bread so much so that I have to keep guard on it before serving because they will devour the loaf in the blink of an eye. Typical to Liguria and Genoa in particular it’s often called focaccia al olio or Fugassa in Genoese dialect. Great tasting focaccia.


Like many of the previous reviewers, I adapted the recipe for my needs. It was a hit with my family, but next time, I would add more than tsp. Focaccia is one of the most famous Italian flatbreads. Rosemary focaccia is also quite popular and sage is another herb that is often used instead of rosemary. In Italy, there are a lot of regional-based focaccia variations.


For example, in the Northwest of Italy, there is a popular recipe for focaccia dolce (sweet focaccia ). Garlic focaccia is a versatile all-purpose flat bread that is always welcome at picnics and with delicious Italian meals. With such a strong flavour, this offering should at least scare off vampires.

Stir, and set aside for minutes until mixture is foamy. Remember to use good quality extra virgin olive oil and sea salt, and to allow. Our focaccia has a moist but airy crumb sandwiched between thin but ultra-crunchy top and bottom crusts, thanks to a generous amount of olive oil in the pan and on top of the dough.


My favorite is rosemary, chopped cherry tomatoes, pitted kalamata olives, coarse sea salt, and good quality olive oil. Traditionally, Ligurian focaccia (and as shown in the recent Salt Fat Acid Heat episode on Netflix) is topped with a salty brine. One popular recipe from The Food Network includes a whole cup of olive oil – yikes! How do you cut focaccia ?
